Background
Ihab Tewfik is the Course Leader for BSc Honours Human Nutrition. Besides his biochemistry background, Ihab holds Master and Doctorate in Public Health, Nutrition department, University of Alexandria in addition to PhD from London South Bank University. As Registered Practitioner in Higher Education - UK, Dr Tewfik has 16 years experience teaching Public Health Nutrition and related subjects in a number of academic institutions. Ihab has carried out 11 research projects for UNICEF-UN in aspects of public health nutrition & food safety and has published a number of publications in refereed journals and international conferences. He has worked as international consultant for BC and various Ministries of Health in the Middle East for more than 10 years.
As a Registered Public Health Nutritionist at the Nutrition Society, Ihab has organized several international conferences, workshops, CPD and short training courses on Nutrition related diseases and Public Health. Ihab is actively collaborating with the School of Biomedical and Molecular Sciences, University of Surrey, the Vaal University of Technology in South Africa, University of Kuwait, Qatar Diabetes Association and University of Cairo Medical School, Egypt on number of programs including; nutrition interventions and dietary diversification targeting vulnerable communities. Ihab is member of the Editorial Advisory Board (EAB) of various renowned international scientific journals; Nutrition Bulletin, at the British Nutrition Foundation, the World Review for Science, Technology and Sustainable Development WRSTSD, the Vaal University of Technology’s scientific journal, South Africa and as Executive Editor for the International Journal of Food Safety, Nutrition and Public Health, Inderscience-UK. In 2006, Ihab was designated as fellow of the Royal Society of Public Health (FRSPH).
Research Interests
Ihab’s current research interests are; body fat and its relationship with metabolic syndrome indicators in overweight pre-adolescents and adolescents; food safety and security; nutrition role in public health; technology transfer to developing countries.

- Prevalence of Overweight and Obesity among 6 – 13 Year Old Kuwaiti School children: Secular Trends, Risk Factors and their Implications.
- Trace element intakes among primiparous women of high socio-economic status in South-West London and their pregnancy outcomes.
- HACCP in the operation of food retail outlets and food related consumer behaviour
- Effect of Ionising Radiation on the Microflora of Poultry and its Chemical Detection by Using Direct Solvent Extraction
- The Investigation of Cytotoxicity and Genotoxicity of 2-Alkylcyclobutatones on different human cell lines
- Biomarkers for predicting breast radiotherapy induced side-effect.
- Nutritional intervention in alcoholic liver disease (ALD). The role of micronutrients (folate, vitamin B and betaine) is being investigated to prevent complications of ALD.
- Energy Alterations and Cell Death in Alcoholic Liver Disease.
- The use of skull cap (Scutellaria laterifolia) in the treatment of stress and anxiety.
